Ghost Cupcakes!

My favorite month of the year is here! Happy October everyone! I made a Halloween advent calendar (click here for Halloween calendar countdown ideas) which one of the days was to make Halloween cupcakes! I saw ghost cupcakes on jennysteffens.BlogSpot.ca and was inspired to make some! Look how cute they are!


Ingredients:
1 box chocolate cake mix (or your favorite chocolate cake recipe)
1 pack of Oreos
Frosting
8 oz cream cheese, room temperature
1 stick butter, room temperature
3 cups powdered sugar
1 tbsp. vanilla
2 tbsp. cocoa powder
Ghost Meringues
4 egg whites
1 cup sugar
1/2 tsp cream of tartar
decorating gel (for eyes)

Directions:
Bake your cupcakes and set aside until cool. (I baked mine the night before)

Preheat your oven to 225 F. Line a cookie sheet with tin foil and pam.

In a mixing bowl beat the egg whites until fluffy.


 
Once the egg whites are stiff (after 2-3 minutes) slowly start adding sugar until well mixed. Add cream of tartar and mix until eggs are stiff and show movement.
 


Once meringue is mixed, stuff it into a piping bag or a ziplock bag and cut the corner off. Form your ghost on the prepared cookie pan and bake 45 minutes or until tops are slightly browned.

Let meringues cool completely before decorating.

Crumble a sleeve of oreos, set aside.

While meringues are cooking, prepare the frosting. Cream together the cream cheese and butter until well blended. Slowly add the powdered sugar and cocoa powder. Once well mixed, add vanilla. Now we are ready to assemble!!

 
Frost the tops of the cupcakes and dip the frosted cupcake into the oreo crumbles.
 


 

Once cupcakes are frosted and coated carefully add the meringues. Use the food coloring and a tooth pick to decorate the eyes.

 
 
They are almost too cute to eat! Happy Halloween!
