Green Smoothie Bowl

Green smoothies were never something that used to interest me in the past. I'll always try something at least once and make it once. Well, the green smoothie I had a few weeks ago was awful. It was so bland! I could get more flavor from chewing on a piece of kale! So, I decided to take it into my own hands and try to make one of these smoothie bowls and it was perfect! It's great for most diets or if you want something packed with nutrients to start your day, and it's pretty! This recipe is Paleo and Whole 30 friendly! Enjoy!

Ingredients:
1 frozen banana
1/2 ripe avocado
1 cup Kale
1 cup frozen pineapple
1 cup unsweetened almond milk
1 tbsp coconut sugar
Toppings:
Banana slices
Strawberry slices
Chai seeds
chopped pecans

Directions:
Blend your frozen banana, pineapple, avocado, coconut sugar, kale, and almond milk until smooth. Pour into your bowl and top with your favorite toppings!

Paleo Sloppy Joe Stuffed Sweet Potatoes

Its day 4 and I am LOVING this Paleo diet. I feel better and I can already start telling a difference with how I am looking ! I can only imagine what I will be feeling like in a few weeks! I did a diet similar to Paleo earlier in the year, Whole 30. It's a little stricter than Paleo but you can find many recipes that compliment both diets. I originally found the recipe on paleonewbie.com.  Hope you enjoy this as much as we did! My husband (who is not on the diet) added sour cream and cheese to his!



Ingredients:
4 baked sweet potatoes
1 1/2 lbs grass fed ground beef
1/2 onion, chopped
1/2 green pepper, chopped
1/2 red pepper, chopped
1/4 cup celery, chopped
1 clove garlic
1 Tbsp chili powder
1 tsp cumin
2 Tbsp coconut sugar
14 oz can organic diced tomatoes
6 oz can organic tomato paste
1 Tbsp coconut oil

Directions:

Prepare your sweet potatoes before you begin (bake/microwave). Heat coconut oil on medium heat. Add garlic, onion, and celery. Cook until the vegetables are tender. Once your vegetables are ready, brown your meat in the same skillet. Start adding your spices, sugar, and bell peppers. Pour in your tomatoes and tomato paste. Simmer your skillet for 15-20 minutes. Finish with salt and pepper to taste. Cut your cooked sweet potatoes in half and scoop out a small portion. Fill your potatoes with sloppy joe and enjoy!

Raspberry Lemonade Champagne Punch

Summer is here! Barbecues, beaches, sunshine, and drinks! Any one who knows me knows that I love champagne. Skip the orange juice, just pour me a tall cold glass of champagne! I decided to change it up for a barbecue we had last night and put some things together for a punch. It was a hit! This punch is light, refreshing, and not too sweet!

Ingredients:
1 bottle Raspberry Lemonade
1 bottle Champagne
4 cups Vodka
1 cup raspberry
2 limes, sliced


Directions:
Mix your ingredients and serve with ice. It's so fresh and light you can't even tell there is alcohol in it! Drink with caution and Enjoy!

Red Velvet Oreo Trifle

With summer approaching, it's time for cookouts, BBQ, and patriotic themed desserts! I had originally planned to make a red velvet cake, but then I found red velvet Oreos! I wanted to make something light and fun to go with the ice cream cake I had already made. Enjoy this beautiful and delicious dessert!


Ingredients:
Red Velvet Cake (Store bought or homemade)
1 package red velvet Oreos
1 large package instant chocolate pudding with milk to prepare
8 oz cream cheese
1 cup powder sugar
1 large tub of cool whip

Directions:
If you are baking your red velvet, bake your cake and cool completely before assembling.
In a medium bowl, prepare your chocolate pudding and set aside.
In a separate bowl, beat your cream cheese until soft. Slowly add your powdered sugar until well blended. Once your cream cheese mixer is well mixed and fluffy, fold in half of your cool whip (this will be referred to as your cream cheese layer).

Take your red velvet cake and crumb into the bottom of your dish. Spread your cream cheese layer over the cake. Stick your red velvet Oreos along the side of the dish (with the bottoms lightly pressed in the cream cheese layer to keep them standing up). Pour your chocolate pudding in the center of the lined Oreos and top with your remaining cool whip. I like to take extra crumbles from the cake and sprinkle on the top of the dessert. Refrigerate until ready to serve.




** With the deep rich red colors of the dessert, this would also make for a great Valentines Day dessert or Christmas! Enjoy!

Deep Fried Twinkies

I stumbled across this recipe when planning my brothers Carnival Birthday Party. I found the original recipe on craftsalamode.com. It is any easy recipe, even for those inexperienced fryer users.


Ingredients:
1 cup flour
1 tsp baking powder
1/2 tsp salt
1 cup milk
2 tbsp. vinegar
1 tbsp.. vegetable oil
1 box of twinkies
Deep fryer with oil.


Mix the flour, baking powder, and salt into a bowl. In a separate bowl mix your milk, vinegar, and vegetable oil. Mix your wet ingredients into your dry ingredients until well blended. Coat Twinkies in batter. Toss in fryer for 1-2 minutes until golden brown. Leave them on a paper towel to drain the grease. Sprinkle powdered sugar on top and enjoy!

Carnival Birthday Party

After weeks of planning, crafting, and cooking the ultimate Birthday Bash was a success! My little brother, Dean, turned 18!!! I can still hardly believe it! We decided to do something big for his birthday/graduation. We were playing around with the idea of having classic games  there, like we did when we were growing up. His birthday always falls around Memorial day and the Strawberry Festival. This time of year always reminds me of the Festival rides, food, and games, thus the carnival birthday party theme was born! We made all the best foods and some fun games with prizes. Since I made everything my self, it was a fairly inexpensive party. Would be great for a first birthday party. You can even make it more adult friendly! (any recipes available will have a link directing you to the page!)



For the invitations, I used the mobile app, Phonto, to arrange the invitation print. We copied this to Microsoft word and printed on cream colored card stock. (For all my card stock, I shopped Michaels Craft store sales. They often have their packs on paper on sale) We trimmed the invitations and glued them to red card stock.

 

 
We took black card stock to make a sleeve around the invitation. I took twine ribbon from the Dollar Store to wrap around each invitation. I had stamps and tags left over from our wedding invitations to add to the front.
 
My parent's back yard is on the smaller side with their pool taking up most of the room. We set out a tent in the front yard with tables, decorations, and games. We took mason jars and filled them with flowers from the dollar store. We placed small red peanut crates with candy peanuts, and pictures of Dean over the years. I used the scraps from the other banners I made to place around the front of the tent. We have a cornhole boards and life size jenga we made last year that we placed in the front yard as well.
 
 
 
Through the front door we had our food table and desserts.
 
For the main course we had pulled pork bbq, baked macaroni & cheese, baked beans, BBQ greenbeans, pasta salad, coleslaw, and cornbread. Michaels was having a 60% off sale on their "Alphabet Soup Letter" collection. I found some cool metal letters to spell out his name on the food table at $1.50 a piece.
 
 
Now anyone that knows me, knows that I LOVE to make desserts. From cupcakes to trifle dishes, so it was only natural that we went overboard at the dessert table. We made a banner that said "Blue Ribbon Bakery".

 
 
 
We had mini Oreo cream pies, Mini banana pudding bites, grandmas pecan tarts, Strawberries and cream cupcakes, Dreamsicle trifle, chocolate cake, and fresh fruit!

We also brought a fryer to make deep fried Twinkies! They are really easy and so delicious!
 
 
We had TONS of games in the backyard.
 
We had originally made a ticket booth but unfortunately it was a little windy outside and it wasn't doing well. We took the popcorn "Welcome" banner and placed it by the back entrance of the fence with a sign and a bucket filled with tickets.
 


The banner was made from stripped paper at Michaels and tissue paper. We printed the letters out, glued them to each rectangle, and hot glued rolled up balls of yellow tissue paper to the tops.


We had a "Fish Toss" game set up. We placed plastic cups (from the Dollar Store) each filled with water. 4 of the cups had rubber fish in them. If they tossed the ping pong ball into the cup with the fish they won tickets. They were allowed 3 shots per turn.

We used plastic spoons and had the kids run a race with water balloons.
 


Ring Toss.
 
Costco sells the classic soda bottles. We used those and rings for the classic ring toss game.
 

 
 
We also had a photo booth set up to go with Dean's new camera he got for his Birthday.
We set up a table with props, including paper Emojis we made.
 
 

 


 
For the pictures, we took an old frame and strung wire through the sides. We wrote everyone's names on extra cardstock with clips. When guests arrived, they swapped their names out with a picture from our photobooth!
 
 
 
We even had a piƱata!
 


Inside we had a "kissing booth". We filled a jar with 348 Hershey kisses! The kids had to make their best guess with how many were in the jar. The winner got 50 tickets and all the candy!
 
 
 
Each of our booths and games had a sign going over the rules, how many tickets to enter, and what the winner received.
 
We used frames from the Dollar store and painted them with chalk board paint to make them reusable.

Fishing Pond
We placed 30 rubber ducks with hooks screwed in their backs. We made fishing poles to fish the winning ducks out.
 
Kleenex Dance Game
Take 2 empty Kleenex boxes and tie to the kids wastes. Place 5 ping pong balls in each. Have the kids dance until all the balls fall out. First to loose all the balls wins!
 
Inside we had our Prize booth all courtesy of the Dollar Store. We separated them from 1,2,3,4,5,6, and 7 ticket prizes.
 
 
The highlight of the evening was the pie throwing contest. I had my husband cut holes out of the boards for my mom and dad to bravely stand in the line of fire.
 
 

 
We used pie tins from the Dollar Store which came in a pack of 3. Instead of making pies, we used the spray whipped cream into the tins.

Banana Pudding

Nothing says dessert like a classic banana pudding. Over the years I have tried every combination of banana pudding imaginable from scratch and box and I have finally mastered the perfect banana pudding. The best part? IT'S FROM A BOX! It is easy, delicious, and no one will know how little time you really spend on preparing the dessert! I love banana pudding for many reasons. The flavor is divine and you can have it any time of the year. Its perfect for a summer cook out or thanksgiving! There is no wrong time for banana pudding!


Ingredients:
Vanilla Cake (I used a Vanilla Pudding Bundt cake made from Food Lion)
2 cups of vanilla wafers
3 bananas
2 boxes of instant banana cream pudding (with milk to prepare)
2 small tubs cool whip
8 oz cream cheese, softened
1 cup powdered sugar

Directions:
Crumble about 2 cups of cake into the bottom of your dish. You can use store bought cake or make your own. If you use fresh cake from scratch, make sure the cake is completely cooled before assembling. Slice up 1 1/2 bananas and layer over your crumbled cake. In a separate bowl, prepare your banana pudding according to the package, set aside. In a medium bowl beat your cream cheese until soft. Slowly add powdered sugar until well incorporated. Fold in 1 tub of cool whip. Layer this cream cheese mix over your banana layer. Layer a row of vanilla wafers over the cream cheese. I like to line the wall of my dish with the remaining banana slices. I lean them against the dish and slightly press into the cream cheese layer too keep them standing up. This makes for a visually appealing dessert. Once you have your bananas lined up, add  in the banana cream pudding. Smooth out to fill in around the bananas. Take 2-3 vanilla wafers and set them aside. Take the remaining wafers and line the wall of the dish. Top with your second tub of cool whip. Crumble your reserved wafers and sprinkle on top. Refrigerate until ready!  You can put your own twist on this dessert too!
