Holy mother of S'mores Cookies

When I get bored, I bake, which unfortunately shows in my hips! But when you find a recipe or play around in the kitchen and find that PERFECT meal/dessert.... its worth those love handles! I found this S'mores cookie bar recipe on sallysbakingaddition.com. It is truly one of my favorite recipes yet (and one of Johnny's favorite too!)

I mean look at how delicious these things look! The picture almost doesn't do it justice with how delicious they are!




Ingredients: 

1/2 cup salted butter, room temperature
3/4 cup light brown sugar
1 tsp vanilla 
1 egg
1 cup all purpose flour
1 cup honey graham cracker crumbs (about 9 graham crackers)
1/2 tsp baking powder
1 1/4 cup semi-sweet chocolate chips
1 cup (or more) marshmallow creme.

Directions:

Preheat oven 350 degrees. Line a 8x8 or 9x9 square baking pan with aluminum foil, leaving enough over hand on the sides. Set aside.

In a large bowl  mix the butter and sugar together until smooth and well combined. Add the vanilla and egg, mix well. Set aside.

In a separate bowl toss the flour, graham crumbs (I just mushed mine in a gallon ziplock bag), and baking powder together. With the mixer on slow, gradually add the dry ingredients to the butter mix. Mix until well combined. 

Press 2/3 (sometimes I use less) of the graham cookie dough in the the prepared pan. Spread out the marshmallow cream on top. (it is easier to spray a spatula with nonstick spray to spread) Sprinkle the chocolate chips on top of the marshmallow creme (we like to cover it in TONS of chocolate chips) 

Mold the remaining cookie dough into flat pieces and layer on top of the chocolate chips. Some of the chocolate chips and creme will be exposed, that is normal.  

Bake the bars for 25 minutes, or until the top layer is lightly golden brown. The tricky part is now resisting the ooey gooey goodness while they cool completely. (Really these are best the next day but its hard to make them and not want to eat them right away) I would recommend waiting at least 4 hours before eating them.  Be prepared to never look at S'mores the same way again!
